South Indian Onion Bhaji

Onion Bhaji recipe is one the easiest hacks you can use in your kitchen when you have unexpected visitors or just want to fix yourself an evening snack with your cup of coffee or tea.

Ingredients

  • 2 medium sized onions or any vegetable of your choice sliced thinly
  • 200 g gramflour
  • 2 tbsp rice flour
  • 1 tsp red chilli powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp baking soda
  • 1/4 tsp turmeric powder
  • 3/4 cup water
  • 2 cups oil for frying
  • 2 tbsp oil for batter
  • 1 tsp salt
  • a pinch orange food colour optional
  • coriander leaves for garnish

Instructions

  1. Add all dry ingredients into a bowl and mix well. Add 2 tablespoon warm oil to the mix to make the batter soft 

  2. Then, add about 3/4th cup of water to the batter and mix well. The batter should now be not too runny nor thick. Make sure the batter does not have any lumps 

  3. Let the mixture rest for 10 minutes.
  4. Heat a pan on medium flame and let 2 cups of oil heat for about 2-3 minutes 

  5. After the oil is ready to fry, dip your choice of thinly sliced vegetables into the batter and fry for a minute on each side 

  6. Garnish with coriander and serve with mint chutney
