Savoury Oats

If you’d thought that I had quit the healthy food diet, you were wrong. Well, it’s hard to stick to it when you’re eating out, but I try to eat healthy as much as possible.

If you’ve been following my website, you’d have noticed how fond I am of oats. So here I have another recipe that uses oats differently! Yes, this recipe is sure to make you crave it once you’ve read through.

The perfect snack or meal, since you can customize it to suit your requirements. And what’s better? It can be prepared by almost anyone! 😀

How to make Savory Oats:

Ingredients

  • 1/2 cup oats roasted
  • 3/4 cup water boiled
  • 2-3 florets of broccoli
  • 1/2 carrot cubed
  • 1/4 potato cubed
  • 1 poached egg optional
  • Cherry tomatoes optional
  • Paprika to taste
  • salt to taste

Instructions

  1. Add 1/2 tsp olive oil to a pan and roast your oats till they're a light brownish in color

  2. On the side, heat a pan with 3/4th cup water until it's slightly boiling. Add water slowly to the pan with roasted oats. Be careful as the water might splatter

  3. Keep mixing the oats till you have a semi-solid mixture. The consistency is your choice. Leave it longer for a thicker mixture.
  4. Pour into a bowl and add your vegetables and poached egg (optional)

  5. Add salt to taste with some black pepper, paprika, chilli flakes and oregano

Recipe Notes

The recipe lists quantities enough for 1 serving. Double them for 2 servings, triple for 3 and so on.

Suggested vegetables: You can use mushrooms, broccoli, bell peppers, potatoes. Either boil the veggies or sauté them. I sauteed mine with some rosemary leaves which really helped enhance the flavor.

Would you just look at that? How appealing does that egg yolk look? Eggs make a great addition to any dish. You can have them scrambled, boiled, poached or with the sunny side up.
