How To Make Palak Paneer in 3 Easy Steps

I’ve been obsessed with paneer from childhood. And there was a good amount of palak (spinach) in my fridge that needed to be used. So I did just what I had to do, called my mum and asked for the recipe of her easy palak paneer! 

This gravy is just so creamy and the paneer (cottage cheese) is so soft that it melts in your mouth! It’s best paired with roti that is smothered in ghee…reminds me of good ol’ days where weight was not a concern!

How To Make Palak Paneer:

You need to remember three main steps for the recipe of the gravy:

  • First, fried onions and tomatoes with spices that need to be put in a food processor to make a paste
  • Second, blanching of spinach and puree
  • And third, mixing of both pastes and adding cream

This is probably the best and the easiest way to make palak paneer at home and you’ll be sure that it is going to taste delicious! The only tool you require for this is a food processor (and maybe some tongs) and most of you will even have it at home.

Ingredients

  • 1 cup onion chopped
  • 1 cup tomato chopped
  • 3 cloves garlic minced
  • 3-4 green chillies sliced
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1 tsp zeera powder
  • 200 gms spinach
  • 1/2 cup heavy cream
  • 1 cup fresh paneer cubed

Instructions

  1. Fry the chopped onions, garlic, and tomatoes in about a tbsp of oil. You will see the onions turning transparent and tomatoes a bit mushy, that's when you proceed to the next step

  2. Now, add the sliced green chilies to the pan and saute till the vegetable cook. This should roughly take about half a minute to 1 minute

  3. After that put in the spices and mix. Cook for about 2 minutes, turn off flame and keep the pan aside to cool (Mixture 1)

  4. Blanch the spinach, first by putting the leaves in hot water and immediately transferring them to another bowl filled with cold water. I use tongs to avoid scalding my hands

  5. Take Mixture 1 and puree in a food processor. You will have a pinkish color of the paste


  6. Use another food processor to puree the spinach leaves

  7. Add both purees to a pan on medium flame and add about a cup of water. Cook for about 5 minutes till you find the curry hot and bubbling


  8. Now is the time to add cream to the curry and mix for a minute

  9. The last step is to put the cubed paneer as generously as you may. You can even keep some pieces as the garnish along with sliced green chilies

Recipe Notes

The amount of cream you add will lighten the color of the curry

Other ingredient options: I can’t think of a different ingredient to substitute, but of course you can add chicken instead of paneer to make Palak Chicken!
