Healthy Banana Pancakes

February 9th is marked as World Pancake Day for reasons I’m not really sure of. But if it’s something related to food, then I’m on it! I decided to make use of this opportunity to create healthy pancakes using just 2 ingredients! Trust me, you will fall in love with these, and the best part is they’re so versatile that you can add whatever you want and they’d still taste oh so good…

These pancakes are light and can be prepared in almost a few minutes. Funny thing is, I seem to be making only things that are best for people running late. But these pancakes are good enough for those lazy mornings when you don’t feel like having a full-fledged meal.

Healthy Banana Pancakes

  • Servings: 2
  • Difficulty: easy

  • 1 banana
  • 2 eggs
  • Maple syrup or honey to drizzle on top (optional)
  • Chopped nuts (optional)
  • Berries (optional)

Mash the banana with a fork in a bowl. Add the eggs in and whisk till it forms a semi-liquid paste. The mixture will have clumps of banana which is okay. Heat a pan with some melted butter and then pour in some of the mixture. Try making the pancakes small, as too thick ones might turn out dry. You can add chopped nuts while the pancakes are still cooking or top them when they’re done like I did.

Flip the pancakes over with a thin spatula and be careful as they might be a bit difficult to turn. After they’re done, put them on a plate and drizzle honey or syrup and add nuts or berries. It’s really your opinion how you like it and you can go crazy with the toppings!

Suggested toppings: Chocolate syrup, flavoured yoghurt, raisins or dates and whipped cream
