Winter in Dubai is my favorite time of the year. The weather is beautiful so it’s the best time to head outdoors. What I also like is that the hubby has holidays so that means some time off for me from the newborn!
Since holidays and lazy breakfasts are almost synonymous, I’ve come up with something that’s going to save your time while also bringing food to the table.
This skillet meal has become my absolute favorite! Not only because it’s delicious, but it is also the best way to clear out your refrigerator. The combination of ingredients used are endless AND you can alter the recipe to your liking.

Easy Breakfast Skillet
- 1 medium-sized onion, diced
- Handful of spinach leaves
- 2 medium-sized potatoes, diced
- 2 small bell peppers, sliced
- 1 medium-sized carrot, diced
- 200 gm boiled chicken, diced
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 2 tbsp olive oil
- 1 lemon
- Salt to taste
Fry the diced potatoes in a pan with 1 tbsp oil until brown and crispy. Sprinkle salt on them. (You can also use boiled potatoes in case you aren’t a fan of fried food)
In another pan over medium heat, add oil and boiled chicken and leave to cook for about 2 mins.
Add the onion and carrot and sprinkle salt. Leave to cook for 3 mins.
Put in the fried potatoes and sliced bell peppers and cook for 1-2 mins. I used a green and red bell pepper for color.
Add the spinach with cayenne pepper and garlic powder. The spinach will start wilting so this is why we add this towards the end. Cook for about a minute and squeeze a lemon over it to your liking.
Serve hot with toasted bread or have it as it is.
Other ingredient options: mushrooms, broccoli, eggs, minced meat, and anything that floats your boat 😉
