So here’s another recipe that’s not only healthy but easy to make. And by easy I mean something that anyone and everyone can whip up.
The best part is, it’s using oats – my favourite! I happened to come across this recipe while I was going through my Facebook feed, and the moment I spotted this, I knew I had to try it. So here it is…my version of a Carrot Oatmeal Porridge.
Carrot Oatmeal Porridge
You’ll require:
- 1 small peeled and grated carrot
- 2/3 cup of oats
- Raisins or dates chopped finely (optional)
- 1/2 cup milk and another 1/2 you’ll need later
- 1/4 tsp vanilla extract
- 1/2 tsp honey
Add grated carrot, oats, raisins and half cup milk into an airtight container. Mix well and keep refrigerated overnight. Heat a pan the next day and add the mixture with half cup milk, vanilla extract and some honey. Mix well until you see the mixture turning semi-solid. You need to wait till the milk has blended well with the mixture.
Serve in a bowl and top with chopped nuts and Greek yoghurt.
I made mine without raisins as I’m not a big fan of them. You can choose to garnish it whichever way you want. So here’s another recipe using oats. Try this and you’ll be surprised how delicious it is!
