After my recent post about Beetroot Milk, I decided to move on to a different dairy product. This time, yoghurt.
Summer is approaching and all you want to do is sip those cool sodas and have ice creams. But what if I have a better and guilt-free option in mind? Something that looks greeaattt too? (Read: Pink in color)
Yes! I’m talking about a Beet Frozen Yoghurt (Beet Froyo) Recipe! Smart ain’t it?
Now, this sweetie is very easy to make, i.e, nothing that will burn your hands or yourself. Adapted from My Diary of Us, I decided to add some vanilla extract and maple syrup for good measure. I always seem to add some vanilla extract as I love how even a tiny drop can change the fragrance and taste.

Beet Froyo
Ingredients
- 2 medium beetroots roasted
- 1 cup yoghurt
- 4 tsp honey
- 4 tsp maple syrup optional
- 2 tsp vanilla extract optional
- pistachios and almond flakes to garnish
Instructions

Preheat your oven to 200 degrees Celsius. Wrap your beetroots/beets in aluminium foil and roast for about 45 minutes. Take them out, peel and mash them with a fork after they are cool.

Add your beets into a food processor and blend till you see a homogenous mixture. Let this cool for about an hour. Later, add this mixture along with yoghurt, honey, maple syrup, and vanilla extract into a bowl and mix thoroughly.

Freeze for about 15 mins first and then beat the batter till its consistency is soft and there are no lumps. Freeze again for 2 hours. Serve, garnish, and enjoy.
This recipe is definitely foolproof. Anyone and everyone can get this right. And what you’re rewarded is a beautiful pink-ish/magenta froyo that will cheer you up in no time.
